Protein Pancakes

I’ve made many versions of protein pancakes, including these St. Patrick’s Day inspired pancakes, but today’s recipe is the simplest, leanest protein pancake recipe that I’ve yet to make…and like.

It takes 2 minutes to throw together the batter, which is why I’ve been eating them every morning after practice for the past 3 days.

  • 1 scoop (about 30 grams) vanilla protein powder
  • 1 whole egg
  • 1 Tbsp. psyllium husks
  • 1/8 tsp. cinnamon (optional)
  • 1/4 tsp. baking powder
  • 1/4 cup sparkling water (or plain water, almond milk, etc.)


  1. whisk together protein powder, psyllium husks, cinnamon, and baking soda.
  2. stir in egg and water until smooth.
  3. Let sit 5 minutes to thicken
  4. Pour 2 Tbsp. of batter onto a hot nonstick skillet. Cook about 2 minutes, flip, cook 2 minutes more, until golden
  5. Repeat until you have used all the batter.

I topped mine with my favorite low sugar pancake topping: unsweetened applesauce, vanilla extract, and coconut oil.

  • 1 1/2 Tbsp. unsweetened apple sauce
  • 1/2 -1 tsp. coconut oil (depending on the consistency you prefer. I used 1/2 tsp.)
  • 1/4 tsp. vanilla extract


  1. Combine all ingredients in small ramekin.
  2. Microwave for 10-15 second until hot.
  3. Stir again before pouring over pancakes.

I used sparkling water to give the pancakes a bit more rise, but truth is, there’s not a huge difference between the pancakes that I made with still water and sparkling water. The baking soda gives them a bit of a lift, as well, but you can leave it out and the pancakes still turn out fine, just a little flatter.

Check out that protein and fiber! These make a pretty low calorie breakfast, so I sometimes pair them with a side of cottage cheese or a couple of eggs if I had a long run that morning. They’re also great topped with fresh berries or bananas.
