What I Ate Wednesday #3

I’m bringing it back! It’s another What I Ate Wednesday {WIAW}!

Fun and Food

I started the morning with an entire french press of coffee….

After yoga, I came home and prepared a bowl of greek yogurt sweetened with stevia and vanilla extract and then topped with Pinot noir-soaked cherries, ground flaxseed, and a small handful of Corn Chex.

Oh, and those Pinot Cherries: good. very good. Paired with cheese, on ice cream, over yogurt, on a spoon. GOOD.

Then I had a dentist appointment and found out that I have a cavity. 😦 I go back in the morning for my filling. I never had cavities until about a year ago, and since then I’ve had THREE. Why now? I take such good care of my teeth.

After the dentist my teeth hurt a little bit, but not so much that I didn’t scarf down lunch in 4 minutes flat.

Lunch came together quickly thanks to all the food I prepped out at the beginning of the week.

Hummus, toasted whole wheat pita, mini peppers, salad with yogurt ranch, and two Little Quinoa Patties. Oh how I love those.

WIAW Lunch

Before I took off for practice, I had a little afternoon coffee and sweet treat. I made these flourless peanut butter chocolate chip chickpea blondies last week and polished off the last one today. There’s not a bad ingredient in the bunch, yet they still taste like dessert.

Trav and I had a good run with the high school team that we coach. Yesterday was a tough hill workout, so today was just an “easy” 6 miler.  I was tired from yesterday’s 8.5 mile hill run. We followed it up with stretching, push ups, and core work.


…And more food

Dinner was a fun idea that I saw in this month’s issue of Cooking Light: Ground Beef and Hummus Pita Pizzas. The recipe called for ground lamb, but I had some lean ground beef already in the freezer. Travis and I LOVE going out for hummus and Mediterranean food, but I rarely make mediterranean-inspired meals at home. These were fun to make and they came together in 20 minutes! I used my homemade hummus, and we really loved the spices in the meat! We each had two pita pizzas. 🙂

I won’t share the entire recipe, since I followed the original pretty closely (other than using ground beef in place of lamb and basil instead of parsley because that’s just what I had around). But you can find it here.

We enjoyed a Tomato Cucumber Salad on the side.

Mediterranean Pita Pizzas

Tomato Cucumber Salad Recipe

  • 1/2 cup cucumber, sliced
  • 1 cup  grape tomatoes, halved
  • 1/4 cup crumbled feta
  • 1 tsp. red wine vinegar
  • 1/2 tsp. extra virgin olive oil (I used a lemon-infused olive oil)
  • 1/4 tsp. salt
  • 1/4 tsp. freshly cracked black pepper


  1. toss all ingredients together in a medium bowl. Let sit for 5 minutes before serving. Serves 2 as a side dish.

After dinner, I nibbled on a piece of dark chocolate.
