Slowly Finding Normalcy

Things are a little less hectic this week than the previous weeks. I’m getting a better feel for my new job, my students, my school, my colleagues…

Everyday I feel slightly more capable than the last. When I become overwhelmed and I think I can’t do it, I hear my parents’ voices  in my mind, “And this too shall pass.” They told me that a lot during my Master’s and my thesis. They were right then, and I’m willing to bet everything that their right now, too.

I think I’m even regaining my status as a domestic goddess because I’ve cooked two nights in a row. And today I did two loads of laundry, swept and Swiffered the kitchen floors, and I suprised Travis with an edible chili pepper plant from Trader Joe’s. I stuck a note in it saying “You are the spice of my life.” So corny.  😉

Last night’s dinner was simple, but a favorite between Travis and I.

A big, colorful salad and baked sweet potato fries.

And then this morning, I made myself a filling bowl of my favorite oatmeal!

My Carrot Cake Oatmeal is so good. It’s been too long since I’ve had it!

Tonight’s dinner is another quick and healthy favorite: Vegan Enchilada Pie

I topped it with crushed tortilla chips for a little crunch! It’s in the oven right now…hopefully ready to be on the table just as Travis walks in the door. (I told you…I’m trying to regain my title as Domestic Goddess.) Don’t judge me.

Of course, none of this slow return to normalcy would be possible without my family and friends.

I was able to unwind a little bit last weekend with my fabulous family to celebrate my brother’s 27th birthday at Buca di Beppo.

Happy Birthday Josh!

The cake, from Buca, was Italian, through and through!

Also, a big thank you to my beautiful friend Tracy, who brightened my day by sending these gorgeous flowers to my classroom!

The card read, “When life gives you lemons…” and there was a lemon inside the vase. Precious.

I am truly blessed.

    You are an amazing lady! and a more amazing daughter! Those salads look delicious and beautiful! Almost too pretty to eat! Loved the picture at Buca! (Josh…Yes! Me…not so much!) :^} XOXO You!
