Welcome to Day 6 of our challenge. That’s right! We’re nearly done! How have you been doing? I can say honestly that I have done every challenge, everyday.
I will make this short and sweet because it’s my birthday and I have things to do!
Today’s challenge is to get 5-7 servings of vegetables in your tummy. Most of us have no problem eating enough fruit, but veggies are usually a different story. Vegetables are typically low in calories, low in sugar, and can prevent so many diseases and conditions, including lowering your cancer risk. Come and get ’em!
Here are some typical serving sizes for vegetabeles:
- five broccoli florets
- ten baby carrots
- one roma tomato
- 3/4 cup tomato juice
- half of a baked sweet potato
- one ear of corn
- four slices of an onion
Greens, such as leafy lettuces or spinach have a serving size of one full cup, while other veggies are usually 1/2 cup per serving. That’s not so bad, right? One big salad and you’ve easily met your goal!
When vegetables look like that how could you NOT want to eat them??

Loved the veggie fajitas you had last night for your BD dinner. I was snatching carrots off your plate when you weren’t ‘lookin!! Those pan seared veggies were “muy delicioso!” The entire meal was! Happy “day-after” Birthday to you!! xoxox M&D
